BBQ Chicken Salad

Crispy lettuce, crunchy tortilla chips, tangy BBQ sauce and creamy ranch dressing. Finally a Gluten Free salad that will fill you up!

Fellow GF readers, we all know about the dreaded Gluten Free salad. Sometimes it is the ONLY option for us. How many times do we hear, “Just get a salad!” Ugh. Boring. I mean how many salads can you eat before you just don’t want to eye another version of that leafy green bowl. After all, it’s usually just some grilled chicken on lettuce. Sad. However. This salad is one of a kind. It has all of the delicious elements you want. It’s creamy, crunchy, tangy, meaty, all of it. It’s my favorite salad and its so simple!

I start the chicken breasts in the crockpot in the morning before work and when I come home I have shredded, delicious BBQ chicken. The rest is simply dicing up my veggies and I am ready to go! If you have kids, check out my BBQ Chicken Grilled Cheese Sandwiches. I usually make these the next day with the leftover BBQ Chicken, but if your kid is like mine… she isn’t eating a salad. I hope you enjoy this easy 2 for 1 meal as much as we do!

Crock-Pot Shredded Chicken

  • 2-3 Chicken Breasts (1-1.5 lbs)

  • 1 c. of Coca Cola (or Dr. Pepper)

  • 1 c. of Sweet Baby Rays BBQ Sauce

  • 3 Cloves of minced Garlic

  • 1/2 tsp Salt

  • 1/2 tsp of Pepper

Directions

Place Chicken, 1 c. of Cola, 1/2 cup of BBQ sauce, garlic, salt and pepper in the crockpot. Cook on slow for 6-8 hrs. of high for 4-6 hrs. When the chicken is tender shred it into the remaining juices at the bottom of the crockpot. Stir in an additional 1/2 cup of your BBQ sauce. (Feel Free to double this for more chicken!!!)

BBQ Chicken Salad

  • Black Beans

  • Corn, canned

  • Tomatoes

  • Shredded Cheese

  • Tortilla Chips, or strips

  • Cucumber

  • Lettuce

  • Shredded BBQ Chicken (See recipe above)

  • Ranch Dressing

Directions

Slice and dice all of your vegetables to your taste. Top a bed of lettuce with corn, black beans, cucumber, shredded cheese, tomatoes, BBQ chicken and crumbled tortilla chips. Then swirl on some ranch dressing and additional BBQ sauce if needed. Enjoy!
