Gluten Free BBQ Grilled Cheese

BBQ Chicken Grilled Cheese. Everything is better with butter and cheese.

I can’t really remember when we started doing this. Pre-Gluten Free if I remember correctly. We were having some grilled cheese sandwiches and I decided to throw some leftover BBQ on top. Simple. It’s so simple and SOOOOO delicious! Whenever I make BBQ at our house, crockpot, grill or whatever. Everyone knows that the next day we will have BBQ grilled cheese sandwiches. It’s no longer a question of what to do with the leftover BBQ, it’s do we have bread and cheese.

Ingredients

  • BBQ Chicken*

  • Cheese Slices

  • Butter

  • Gluten Free Bread

Directions

Warm up your leftover BBQ chicken and set it to the side. Butter two slices of your GF bread for your grilled cheese. Using a skillet over medium heat place one slice of bread, butter side down. Add the slice of cheese and your warm BBQ Chicken. Place second piece of bread on top, butter side facing up. Flip when the bottom is golden brown.

There are many different types of Gluten Free Bread. I often use whatever is on sale at the time. I have tried a variety of brands but my current favorite is Schar. They also have delectable Ciabatta rolls. They are so soft and fluffy you’ll wonder if they are actually Gluten Free!!
