Delicious, creamy baked Mac & Cheese with Gluten Free noodles that actually stay together!!

There is nothing like a delicious bowl of creamy macaroni and cheese. If you’re not new to the gluten free world then you already know that gluten free noodles can be finicky. Within the span of one minute they can go from too hard to falling apart. That is why, my fellow gluten free connoisseurs, I have tried many… maybe too many, brands of noodles. I have found that Banza’s GF Chick pea pasta to be the best. You can try other chick-pea noodles but these are the ones that I trust. They have a stiffer stronger feel and they hold together way better when you have to cook them twice. They also have an elbow shape, which is EXACTLY what I want. I hope that you enjoy my recipe for GF Macaroni and Cheese!

Ingredients

  • 1 Box Of Banzas Pasta (8 oz)

  • 1/2 tsp Pepper

  • 1/2 tsp Salt

  • 1/2 tsp Garlic, minced

  • 1/4 c. of Diced Onion

  • 1 TBSP of Butter

  • 2 oz. of Cream Cheese

  • 8 oz. of Sharp Cheddar Cheese, Shredded

  • 4 cups of Milk

  • 1/4 c. of GF Bread Crumbs

Directions

Before I start cooking this recipe I shred a block of cheddar cheese. I find that pre-shredded cheeses doesn’t melt as well, so I shred it myself. Butter a Pyrex baking dish, I used an 2 Quart Oval, but you could use a 9x12 baking dish. Set your oven to 350 Fahrenheit.

In a medium sized pot, over medium-low heat, melt one TBSP of butter. Add in the diced onion and cook 3-5 minutes until tender. Add in the minced garlic and cook 1-2 minutes. Pour in the four cups of milk and the box of Gluten Free Banza noodles. Bring the milk and noodles to a boil. You will need to boil these noodles for 7 minutes. They should still have a bite to them. You must continuously stir these noodles or the milk will burn on the bottom. After the noodles boil for 7 minutes add in your pepper, salt, cream cheese and shredded cheese.

Pour your gooey mac & cheese into the baking dish and top it with 1/4 cup of bread crumbs and bake for about 30 minutes or until golden brown and bubbly.

*I season my breadcrumbs with a little salt, pepper and garlic powder
